TJs makes a mean (in fact, 3 mean) pizza doughs, all of which are hechshered. I’ll hopefully get a chance to do this soon and report back on the efficacy.
I’ve got a similar trick for making tortilla pizzas on those late nights when I want something quick (before my brain convinces me I shouldn’t be eating junk food). I heat a non-stick skillet (cast-iron would do), grease it a bit, pop in a tortilla, dress it lightly with sauce and cheese, and cook until it’s crisp underneath. Then I throw it under the broiler for a minute to get some char.
I’m “famous” with my kids’ friends for something similar, which I named a “pizzadilla”. Two flour tortillas with sauce and mozzarella sandwiched between. Can either be microwaved (1 minute, flip, 1 minute) or pan fried (non stick pan) – just a warning though – if you start making these for a group of teenagers, better have a lot of supplies on hand!
My teenagers have mastered the skill of lightly toasting a flatbread/non-pocket pita; applying sauce, mozzarella, parmesan and any other interest toppings, and returning the bread to the toaster for a second toast until the cheese melts. Voila! instant pizza.
