Duncan Hines going back to Pareve

According to the latest KosherToday newsletter, Duncan Hines cake mixes will be going back to a pareve formulation. The Manischewitz mixes were a decent alternative, but I probably won’t be using them if Duncan Hines is available.

If you’re still stuck with Manischewitz while waiting for the pareve DH to hit your local store, try doctoring up the chocolate flavor as follows:

- replace the water with strong, hot coffee
- replace the oil with applesauce

Once the cake cools, frost it with the “Buttermilk frosting” recipe that appears on the back of the Domino’s Confectioners Sugar box, replacing the milk with orange juice and adding enough cocoa powder to give the frosting a nice, light brown color. Sprinkle crushed chocolate cookies on top of the frosting.

This turns the Manischewitz chocolate cake from “decent” into “decadent.” Admittedly, though, the results are far better when using DH.
