Foolproof Matzo Balls
There are a number of ways to make matzo balls light and fluffy. This recipe uses beaten egg whites:
3 eggs, separated
3/4 cup matzo meal
1/2 tsp saltBeat egg whites until stiff. Slowly beat in yolks. Fold in matzo meal and salt. Form into balls with a spoon and drop into boiling water or soup stock. Cover and simmer for 1.5 hours. Remove with slotted spoon so that all liquid drains off.
Yields 10-12 balls.
