		<description>Here in the great Pacific Northwest, we have WILD salmon and a processing plant. They want to make kosher lox. We have a consistent hiqh quality source of salmon, a clean and well inspected processing plant and zero knowledge of how to begin.
This is in the NW part of Washington State. Any advice including not to do it would be appreciated.</description>

We have been buying our smoked salmon at Costco for years.  It is very good, and ranges from $8 - $15/lb.</description>
