Not totally related, but you haven’t mentioned Tillamook cheeses. Only one of their varieties is under the Chof-K, but it is excellent for what it is, a daily cheese. They make identically to their non-kosher cheeses.
I have indeed linked to it off-hand, but you’re right — it needs more attention. I happen to love the Tillamook kosher variety, and heartily recommend it to anyone looking for a non-sharp cheddar. It’s available at Whole Foods, and occasionally at the Butcherie. (It would be nice if an extra-large size were available in these parts.)
It’s not chof-k hasgacha on the tillamook - it’s a cent sign with a k in the middle. According to my lists, that’s Kehilla Kosher of California’s food service products hashgacha sign
BS"DActually, Hoss, it’s Kehilla’s sign for non-cholov yisroel products. Had it been cholov yisroel, it would have worn a heart-K.
