Bistro Apple Pizza
This “Bistro Apple Pizza” was a big hit at our little dinner party last night. The recipe comes, with slight modification, courtesy of our friends at Cappiello Cheese, and puts Kirkeby’s Kosher blue cheese to great use.
Note: we were a little pressed for time, so I skipped the sauteed-garlic step and just used some garlic powder. I wouldn’t advise doing so if you have time for fresh garlic, but it works.
BISTRO APPLE PIZZA
2 teaspoons garlic
2 tablespoons olive oil
2 cups fresh, chopped spinach
1 1/2 cups of apple, cored, peeled and chopped
1 cup shredded mozzarella
1 cup crumbled blue cheese
1/2 cup shredded parmesan cheese
1 teaspoon dried leaf oregano
pizza dough, rolled into a 12″ round
Preheat oven to 500 degrees F, with your pizza stone or tiles inside, for 30 minutes to an hour. Sautee garlic in olive oil for 1-2 minutes. Brush olive oil blend over crust. Distribute spinach evenly over crust. Sprinkle on apples. Blend cheeses together and sprinkle evenly over apples. Sprinkle on oregano. Bake for 10 minutes or until cheese and crust are browned.

What would you suggest using as an alternative to spinach?
If you really dislike spinach, you could just omit it. You might want to add a little simple tomato sauce or chopped tomatoes to help things blend together.
It’s not that I dislike spinach. Rather, I’m too lazy to check fresh spinach for bugs, and I can’t imagine that frozen spinach–even if cooked prior to use–would give the right texture.
I may try replacing the spinach with some steamed broccoli… we’ll see what happens the next time I make pizza dough.
Oh, if that’s the case, use frozen chopped spinach! It works well, just defrost it and squeeze out as much liquid as possible.
Great! Now I can save my broccoli for sesame chicken stir-fry, where it belongs. :)
